Pork Stir Fry
cooking oil
1 lb. pork, cut in small pieces
1 c. fennel, chopped
1 c. leek leaves, chopped
2 T. chopped ginger root
2 c. carrots, sliced thin
4-5 c. chopped bok choy (keep stems & leaves separate)
1 c. snow peas (do not use snap peas as they are higher in FODMAPs)
salt & pepper
liquid coconut aminos
Brown pork in cooking oil in a large skillet or wok. Add fennel, leek & ginger. Stir fry briefly. Add sliced carrots. When carrots are partially cooked, add in bok choy stems & snow peas. When nearly cooked, add in bok choy leaves. Stir-fry another minute, then add salt & pepper & liquid aminos.
