Sautéed Eggplant And Cabbage

INGREDIENTS

• 1/4 cup Olive Oil
• 2 to 3 cups Eggplant, diced 
• 1/2 cup Green leek tops, sliced thin 
• 3/4 cup Poblano peppers , chopped 
• 4 to 5 cups Cabbage , chopped 
• 2 or 3 Roma Tomatoes, chopped 
• 2 Tbsp Fresh Basil
• 2 cups Cooked pork , diced 
• Salt & Pepper
• 1 cup Shredded Cheese, optional 

PREPARATION STEPS
1. Salt eggplant and allow to rest 10 minutes. (This reduces the amount of oil the eggplant will absorb.)
2. Heat olive oil in a large skillet.
3. Add eggplant and sauté 10 - 15 minutes.
4. Add leeks, peppers and cabbage.
5. Season with salt, pepper, and basil.
6. Sauté another 10 to 15 minutes.
7. Add cooked pork and heat thoroughly.
8. Add shredded cheese if desired.
